Manual harvest in 18 kg boxes. and manual selection of bunches. Transport of the crates to the winery, selection with conveyor belt before going to the destemmer-shredder. Pressed product transported to a 50hl fermentation tank, where alcoholic fermentation takes place, with daily pumping over and wetting of the cap, for approximately 25-28 days. Racking off, followed by malolactic fermentation, decanting and storage in Austrian oak barrels for approximately 40 months. Following bottling, the bottles are stored in the storage cellar at a controlled temperature of around 15°C with 70% humidity.
