Pressing of whole bunch grapes with a must yield of 50%. Fermentation at 15/18°C and aging on the yeasts for 8 months. Refermentation in the bottle according to the Classic Method, with permanence on the yeasts for a minimum of 36 months and traditional remuage on the pupitres. Addition of the dosage liqueur created with a “perpetual” wine reserve.
Straw yellow color with fine and persistent perlage. Complex, citrusy nose, with pleasant notes of honey and toasted bread. Full, fresh and persistent sip.
