Manual harvest in boxes; fermentation at a temperature below 30°C conducted by the grapes’ native yeasts, 7-day maceration with wetting of the cap; the wine matures for 6 months in steel and barriques.
Deep ruby colour, tending towards garnet; intense, complex and elegant nose, with mineral, iodine and balsamic notes, and hints of red fruits and spices; fresh and structured sip, with returns of olfactory notes and long persistence.
Grilled meats, roasts, mature cheeses.
