“Caccia al Piano” Bolgheri Superiore DOC 2018

The grapes of each variety are harvested by hand and vinified separately; manual selection on the sorting table, destemming, fermentation in steel and oak barrels depending on the variety and vintage, at a controlled temperature. After maturation for a year in French Allier oak barriques, both new and second passage, the blending of the different wines is carried out. The blend rests in large barrels and barriques for another year, after which it refines for a further 6 months in the bottle.

Dark ruby ​​red, on the nose notes of liquorice, cinnamon, camphor and pepper open to clearly fruity, jammy and slightly vegetal scents. A Mediterranean hint then opens up to a rich, fresh, very long taste. Well balanced, it closes with a very persistent finish that returns to slightly vanilla notes.
