85% Chardonnay, 15% Grechetto
The grapes are harvested in the very early hours of the morning, after which they undergo a skin maceration at 10°C which lasts approximately four hours; the must is then clarified by decanting and transferred to barriques for alcoholic and malolactic fermentation. Usually after five months the Chardonnay is ready to be transferred back to steel to combine with the Grechetto, which is vinified separately and in the absence of wood.
Pale yellow color with greenish reflections. The nose is intense and complex, with notes of citrus fruits, pineapple and acacia flowers, and hints of vanilla and flint. On the palate it is full, fine and well structured; the pleasant flavor is well balanced by the typical sweet sensations of hazelnut butter.
First courses of fish or with white meat ragù, crustaceans and molluscs, roast white meats, also cooked with mushrooms.
