BottlesDestemming, short maceration in pneumatic presses and delicate pressing. Cooling of the must and decantation in insulated tanks Fermentation in stainless steel tanks at a controlled temperature (14°) for approximately 20 days. Maturation in steel tanks for 7/8 months. Bottle aging on yeasts for approximately 6 years. Manual riddling on pupitres.
Intense antique pink color with fine and persistent perlage. Nose with delicate hints of small wild red fruits and hazelnut. Elegant and mineral sip, intense and persistent, with returns of wild fruits and a citrus touch.
