70% Chardonnay, 30% Pinot Noir
Manual harvest at the end of August, soft pressing with dry ice. Separate fermentation of the varieties. The Pinot Noir has a short maturation in barrique for about 3 months, while the Chardonnay matures in stainless steel tanks with weekly batonnage. In spring preparation of the blend for draft and subsequent refermentation and maturation for 30 months according to the Classic Method in the winery caves at a natural temperature of 15°C.
Straw yellow color with light greenish reflections; nose with herbaceous and citrus notes, and the typical hint of bread crust due to aging. The sip is fresh and clean, well supported by a persistent but delicate bubble.
