Pinot Noir
Grapes harvested by hand and carefully selected at the sorting tables. The spontaneous and completely natural fermentation, entrusted only to native yeasts, lasts from 18 to 25 days and takes place in oak vats at a controlled temperature. After fermentation, the wine rests for 12 months in French oak barriques, half of which are new and the rest preserved from the previous year. It rests for another 3/6 months in concrete tanks, in a natural purification process that allows it to be bottled without filtration. Finally, the wine ages in the bottle for another 12/24 months.
Intense ruby ​​red colour; nose of cherry, berries and balsamic and spicy notes. Full, soft, delicate, fine and balanced sip, with elegant tannins and good acidity.
