Grapes harvested by hand at full phenolic ripeness, vinified in steel; tirage with the Only Grape method (using wine must instead of sugar); refinement on the yeasts for 24 months and, after disgorgement without dosage, refinement in the bottle for another 6 months.

Bright straw yellow color with fine and persistent perlage; rich nose, of golden apples, citrus fruits, honey and wild herbs; fresh and enveloping sip, with good flavor and persistence.

Aperitif, seafood appetizers, crustaceans and molluscs.
