Garganega
The grapes are harvested in boxes, on which they dry for about a month. It is then destemmed and left in the press to macerate (skins and must together) for at least 16 hours. It is then pressed and clarified and fermentation begins at a controlled temperature. The wine then ages in concrete barrels for at least a year. Following bottling, it remains in the bottle for a few months to age.
Pale yellow colour, aromas of ripe exotic fruit, almond paste, with spicy hints of white pepper and vanilla. In the mouth it is savory and dry.
Mushrooms, crepes, grilled white meats, tasty fish.
