BottlesManual harvest with careful sorting; 8/10 days in contact with the skins with frequent delestage, racking once alcoholic fermentation is complete. Malolactic fermentation completely carried out in steel or concrete; maturation on the fine lees partly in concrete and partly in large wooden barrels.
Dark ruby red colour; nose of blackberries and cherries, moist earth, black pepper and nutmeg, cinchona and menthol tobacco. Intense, warm and mineral sip.
Red meats, pork, semi-mature cheeses.
