Grolleau, Gamay, Pineau d’Aunis
Spontaneous whole-cluster fermentation in open vats for a week with some light punching down, then soft pressing and aging in vats and old 500-liter barrels for 6 months before bottling.
A wine with a pleasantly gentle acidity but also incredibly soft and fresh, with delicate and slightly bitter tannins.
Cured meats and cheeses, meat-based appetizers, grilled white meats.
