Manual harvest in crates, destemming and soft pressing; the crushed grapes are transferred into terracotta amphorae for alcoholic fermentation started with a pied de cuve prepared previously and started with indigenous yeasts; maceration on the skins for about 12 days, during which the cap is wetted but not broken; malolactic fermentation and maturation in amphorae for 12/24 months.
Deep ruby red color; complex nose of blackberry, undergrowth, leather and chocolate; rich and juicy sip, dynamic, with great balance.
Stewed red meats, grilled meats, mature cheeses.
