The harvest is manual and takes place at different times to obtain different acidities and with selection of the best grapes. The freshly harvested grapes are subjected to immediate crushing and destemming. Vinification with controlled maceration based on the qualitative data of the grapes of the year. After racking and malolactic fermentation, the wine continues to refine in small first passage barrels and tonneaux. The average duration of the wooden elevation is approximately 24 – 30 months. The wine perfects its refinement in the bottle for about a year, at the end of which the product will be ready for sale. The wine is produced only in the best years.
