Manual harvest in boxes; soft pressing, static decanting and tapping; fermentation in steel at 18/20°C conducted by selected yeasts; maturation and refinement for one year, between steel and bottle.

Intense yellow color, with green veins; fragrant nose of fresh fruit, Mediterranean spices, medicinal and balsamic herbs; large sip, large volume and good length, with a Mediterranean aromatic return.
Raw fish, crustaceans and molluscs, seafood appetizers, grilled fish.
