Manual harvesting in crates; fermentation in rotary fermenters at a controlled temperature of 26°C for 5 days; the wine matures in steel vats for 6 months and then one month in bottles at a temperature of 15°C.

Purplish red colour; nose of flowers and red fruits, cherry and currants; dry and very well-balanced on the palate.

Braised meats, roasts, mixed boiled meats, mature cheeses.
