Description

After careful thinning out in the vineyard, the hand-picked grapes are crushed and fermented in temperature-controlled steel tanks. After racking, the wine is placed in 5hl tonneaux for two years, after which it is blended in steel, where it remains for a few months. After bottling, it is placed in a constant-temperature room for a year.

Tasting

This wine displays a beautiful garnet red colour, suggesting maturity and stability. The nose develops complex aromas of ripe fruit, herbs and balsamic and spicy notes. On the palate it is full-bodied and harmonious with the right fruit/wood ratio and a finish made pleasantly austere by the tannins.

Pairings

It is perfect with roast veal, game both roasted and spit-roasted. Ideal with truffle dishes and mature cheeses.
