The grapes, collected in small boxes and selected, are left overnight in the winery, to obtain the natural refreshing of the fruits; fermentative maceration for approximately 10 days, racking with soft manual pressing of the skins. The free-run must is cooled after pressing and added to the wine before bottling, the natural refermentation in the bottle is completed after about 3 months and leaves room for continuous refinement.
Full-bodied purplish red colour; on the nose spicy fermentative notes and berries; intense and material sip, with an acidic and mineral vein characteristic of the lands of origin.
Cured meats and cheeses, fried gnocco, fried meat or fish.
