Spergola Extra Brut Defratelli 2018

The grapes, collected in small boxes and selected, are left overnight in the winery, to obtain the natural refreshing of the fruits; brief maceration during the first part of fermentation, progressive drawing off of the skins, manually and without final pressing. Aging for 36/48 months on the yeasts in the bottle with periodic movements. Manual disgorging and topping up with the same bottles being processed, without dosages.

Deep golden color, with dense effervescence; intense notes of sourdough and spices, with hints of hazelnuts and candied pear; crunchy, saline, tannic, from the depths of the old roots from which it originates.
