For the production of this wine, both the careful care of the vineyards and the ideal housing for the production of sparkling wine are of great importance, and above all the great complexity of the geological composition of the soils originating from the movements of the glaciers over the millennia. The vineyards have their roots in them and transfer part of this complexity and richness to the grapes. Vines over 15 years old trained using gujot and low spurred cordon. The terrain is made up of massive glacial and colluvial deposits, characterized by heterogeneous mixtures of gravel, sand and fine polygenic sediments. The harvest is carried out by hand after organoleptic tasting. Soft pressing of the whole grapes at a temperature below 15°, with a maximum must yield of 55% vol./weight. Maturation of the sparkling wine base in stainless steel. Aging sur lies for a minimum of 36 months.
