Manual harvest in bins and partly in boxes, with selections in the vineyard at the beginning of October. The harvest is delayed by aiming for over-ripening in the vineyard, with painstaking selection of the bunches. The grapes are pressed, destemmed and placed to ferment in temperature-controlled stainless steel containers. From the early stages we intervene with daily pumpovers and some delestages. The post-fermentation maceration is extended for a few days and the new wine rests for a few weeks in steel to encourage natural clarification; it is then decanted into small-capacity wood, where it completes the malolactic fermentation. Maturation in small oak barrels for 12-18 months, refinement in bottle for 6 months.
