“Sotto Casa” is a Cru and the grapes used in its production come from a single vineyard which gives its name to the wine. It is produced with the idea of harmonizing the elegance, character and freshness of Sangiovese with the tannic texture, structure and fullness of two international grape varieties, Cabernet and Merlot. Each variety is harvested and vinified separately, placed to ferment in oak vats filled to no more than two thirds of their capacity. Fermentation lasts about 10 days at controlled temperatures between 28 and 30 degrees, and takes place using native yeasts. The cap is manually pumped over and punched down, and once fermentation is over, maceration can continue for another 5/8 days. Each cuvée thus obtained ages separately in Slavonian or French oak barrels of 3 to 30 hl depending on the variety for which they are intended, and the malolactic fermentation also takes place in the same barrels. Here the wines mature for 28 to 32 months, and at the end of maturation the final blend is carried out. The wine ages in the bottle for a few months before being released on the market.
