The sparsest and healthiest bunches are harvested when perfectly ripe and placed on the “aréle” in the dryer for 5 months, caressed by the local breeze, the Ora del Garda. During this phase, the so-called noble rot (botrhytis cinerea) develops on the grapes, which will give great complexity to the wine. After this period the wine is left to ferment in a steel tank, before moving into small acacia and oak barrels where it will rest and mature for many years.
Bright amber yellow color. Intense and broad nose of ripe fruits and jams. Very sweet and dynamic sip, of great complexity, which closes in a velvety, long-lasting sensation.
Perfect in combination with pastry desserts and mature or blue cheeses.
