Manual harvest in boxes with selection in the vineyard, between the end of September and mid-October; soft pressing with pneumatic presses, static decantation of the must, fermentation with native yeasts at a controlled temperature of 18/20°C. Maturation on the fine lees in steel for 3 months; refermentation in the bottle with the addition of its chilled must.
Essential, light, it has a scent that varies over time. Fresh and fruity nose reminiscent of unripe apple and wisteria flowers, with a delicate perception of bread crust, with the passage of time, we arrive at increasingly complex notes deriving from contact with the yeast on the bottom. Fresh and dry sip.
