Description

Manual harvest in mid-October with previous thinning of the bunches; soft crushing and subsequent 10% bloodletting. Daily pumping over for the entire duration of maceration. Maceration and fermentation at a temperature of 25/28°C for 15 days. Malolactic fermentation and maturation in concrete tanks.

Tasting

Ruby red color with violet reflections; nose of red fruits and cherry, with notes of violet, wild herbs and spices; enveloping and soft sip, with good freshness and flavor.
