Pignoletto, Albana
Late harvest of overripe and botrytised grapes; soft pressing of whole Pignoletto grapes. Fermentation in cement tanks, batonnage sur lies for 6 months, decanting and aging in cement tanks. Blend with a small quantity of late harvest Albana kept in perpetual cement tank with the “solera method”.
Deep gold colour; intense and complex nose, apricot and ripe fig stand out; enveloping sip, with great balance between sweetness and freshness, very long.
Dry pastries, baked cakes.
