“Collis Breclemae” Ghemme DOCG 2015

The name ‘Collis Breclemae’ derives from the fact that the vineyards are located on the hills above the now destroyed medieval village of Breclema, a strategic stronghold on the outskirts of Ghemme. The grapes are harvested by hand around the second half of October, and traditional winemaking involves fermentation at 28-30°C with daily manual punching down to encourage the extraction of polyphenols from the skins. In the next phase, the wine is racked into oak barrels for aging, followed by further refinement in the bottle.
