Description

The late harvested grapes are partly destemmed and softly pressed and partly collected in small boxes and left to dry in the drying room. The vinification continues in stainless steel barrels at a controlled temperature, while the must of the dried grapes is left to ferment in French oak barriques for 24/36 months. Finally, the assembly of the parts.

Tasting

Intense golden yellow colour, delicate and characteristic scents reminiscent of acacia, almond and peach in bloom, with honey and beeswax; moderately sweet, fine, balanced and soft but full-bodied, with a fruity and slightly tannic flavour.

Pairings

Dry pastries, mature and blue cheeses, also perfect on its own.
