Description

Manual harvest starting from the third week of August with soft pressing of the fresh grapes and subsequent fermentation in small temperature-controlled stainless steel tanks. In late spring, the entire batch of wine from the relevant vineyard is bottled for long fermentation. After at least 120 months of maturation on its lees it is disgorged and refined for a further 6 months. Sold after at least 12 years.

Tasting

Brilliant golden yellow color with particularly fine and rarefied perlage; fruity nose with hints of hazelnut, exotic fruit and peanut butter with a mineral finish; fresh sip with a brioche aftertaste and a fullness, flavor and complexity worthy of the greatest blanc de noir.

Pairings

Great dishes of Mediterranean cuisine based on both fish and meat, long-matured cheeses.
