This sparkling wine is part of the project to recover historic Trentino pre-phylloxera vines. Vineyard of origin: Municipality of Faver; Vineyard area 0.16ha, 3000 vines/ha, altitude 750m/a.s.l. with southern exposure, Trentino pergola training. Year of planting, 1966 for the old vineyard, 2000 for the new one. Light gravelly soil. Manual harvest in boxes with selection in the vineyard. Vinification: maceration on the skins for 48 hours, pressing and fermentation at a controlled temperature with Native yeasts. Maturation in stainless steel tanks for 9 months. Second fermentation at the end of June of the year following the harvest. Permanence on the yeasts 56/62 months. Maturation after disgorgement for another 6 months.
