Description

After harvesting, natural drying of the bunches in boxes. Vinification in steel, with cold pre-fermentation skin macerations for 36/48 hours. Aging for 12 months in steel and 4 months in the bottle.

Tasting

Intense and persistent, aromatic; acacia, thyme, sage, yellow peach, sweet almond and honey emerge.

Pairings

Desserts, especially tiles and dry pastries. Foie gras, blue cheeses and mature toma cheeses. Meditation wine.
