BottlesManual harvest in boxes; fermentation in truncated cone vats without temperature control; maturation for 18/20 months in new, second and third passage barriques; bottle aging for 24 months.
Deep red color; intense and complex nose, of ripe red fruits and morello cherries in alcohol, with spicy notes of green pepper and hints of blackberry, plum, pepper, coffee and chocolate; enveloping, velvety and persistent sip.
Game, stewed red meats, braised meats, mature cheeses.
