This sparkling wine is part of the project to recover historic Trentino prephylloxera vines. Vineyard of origin: Municipality of Faver; area planted with vines 0.16ha, vine-stocks/ha 3000, altitude 750m above sea level with southern exposure, Trentino pergola training system. Year of planting: 1966 for the old vineyard, 2000 for the new one. Light gravelly soil. Manual harvesting in boxes with selection in the vineyard. Vinification: maceration on the skins for 48 hours, pressing and fermentation at controlled temperature with indigenous yeasts. Maturation in stainless steel tanks for 9 months. Foaming at the end of June of the year following the harvest. Staying on the lees for 56/62 months. Maturation after disgorgement for a further 6 months.
